  • 300ml double cream
  • 200g mascarpone cheese
  • 100g caster sugar

Instructions

Step 1: Prepare the Lemons

Finely grate the zest from both lemons, then squeeze the juice. Set both aside.

Step 2: Whip the Cream

In a chilled mixing bowl, whip the double cream until soft peaks form. Avoid overwhipping to keep the mousse light.

Step 3: Mix the Base

In another bowl, beat together the mascarpone, caster sugar, vanilla extract, lemon zest, and lemon juice until smooth and creamy.

Step 4: Fold in the Whipped Cream

Carefully fold the whipped cream into the lemon mixture using gentle strokes until fully incorporated.

Step 5: Whisk the Egg Whites

In a clean bowl, whisk the egg whites with a pinch of salt until stiff peaks form. Fold them gently into the mousse mixture to create a light and airy texture.
