Ingredients
For the Lemon Mousse
- 300ml double cream
- 200g mascarpone cheese
- 100g caster sugar
- 2 large lemons (zest and juice)
- 1 teaspoon vanilla extract
- 2 large egg whites
- A pinch of salt

- Fresh raspberries
- Blueberries
- Mint leaves
- Crushed digestive biscuits
- White chocolate shavings
Instructions
Finely grate the zest from both lemons, then squeeze the juice. Set both aside.
In a chilled mixing bowl, whip the double cream until soft peaks form. Avoid overwhipping to keep the mousse light.
In another bowl, beat together the mascarpone, caster sugar, vanilla extract, lemon zest, and lemon juice until smooth and creamy.
Carefully fold the whipped cream into the lemon mixture using gentle strokes until fully incorporated.
In a clean bowl, whisk the egg whites with a pinch of salt until stiff peaks form. Fold them gently into the mousse mixture to create a light and airy texture.
Divide the mousse into serving glasses or bowls. Refrigerate for at least 2 hours until fully set.
Decorate with fresh berries, extra lemon zest, mint leaves, or crushed biscuits before serving.
