Description

Jamie Oliver’s Leftover Lamb Wraps recipe takes tender, shredded lamb and combines it with fresh vegetables, herbs, and a zesty yogurt dressing, all rolled into a soft flatbread or tortilla for a simple and delicious meal.


Ingredients

    • 400g (14 oz) leftover roast lamb, shredded

    • 4 soft flatbreads or tortillas

    • 1 small red onion, thinly sliced

    • 1 cucumber, sliced into thin sticks

    • 2 tomatoes, diced

    • A handful of mixed salad leaves (e.g., lettuce, rocket, or spinach)

    • 1 teaspoon ground cumin or paprika (optional, for flavor)

For the Dressing:

    • 200g (¾ cup) natural yogurt

    • Juice of ½ a lemon

    • 1 garlic clove, minced

    • 1 tablespoon olive oil

    • 1 small bunch fresh mint, finely chopped

    • Salt and freshly ground black pepper to taste


Instructions

Step 1: Reheat the Leftover Lamb

    • Heat a non-stick pan over medium heat. Add the shredded leftover lamb with a sprinkle of ground cumin or paprika for extra flavor.

    • Warm the lamb for 5-6 minutes, stirring occasionally, until heated through.

Step 2: Prepare the Dressing

    • In a small bowl, mix the natural yogurt, lemon juice, minced garlic, olive oil, and chopped mint.

    • Season with salt and freshly ground black pepper to taste.

Step 3: Assemble the Wraps

    • Lay the flatbreads or tortillas on a clean surface.

    • Spread a generous spoonful of the yogurt dressing over each flatbread.

    • Add a layer of mixed salad leaves, followed by the sliced cucumber, tomatoes, and red onion.

    • Top with the warm, shredded lamb.

Step 4: Roll the Wraps

    • Fold the sides of the flatbread inward, then roll tightly from the bottom up to secure the filling.

Step 5: Serve and Enjoy

    • Slice the wraps in half, drizzle with extra yogurt dressing if desired, and serve immediately.
