Description

    • 8 lamb cutlets (about 120g each)

    • 2 tablespoons olive oil

    • 2 garlic cloves, minced

    • 1 teaspoon fresh rosemary, finely chopped

    • 1 teaspoon fresh thyme, finely chopped

    • Zest of 1 lemon

    • Salt and freshly ground black pepper to taste

    • 1 tablespoon butter (optional, for cooking)


Instructions

Step 1: Marinate the Lamb

    • In a small bowl, combine olive oil, minced garlic, rosemary, thyme, lemon zest, salt, and pepper.

    • Rub the mixture over the lamb cutlets, ensuring they are evenly coated.

    • Cover and let them marinate in the refrigerator for at least 30 minutes, or up to 4 hours for maximum flavor.

Step 2: Heat the Pan or Grill

    • Heat a large skillet, grill pan, or barbecue over medium-high heat. Add a drizzle of olive oil or a knob of butter to the pan.

Step 3: Cook the Lamb Cutlets

    • Place the cutlets in the hot pan or on the grill.

    • Cook for 3-4 minutes on each side for medium-rare, or longer if you prefer your lamb more well-done.

    • Use a meat thermometer to check the internal temperature: 60°C (140°F) for medium-rare, 65°C (150°F) for medium, and 70°C (160°F) for well-done.

Step 4: Rest the Cutlets

    • Remove the lamb cutlets from the heat and let them rest on a plate for 5 minutes. This allows the juices to redistribute and keeps the meat tender.

    • Serve the lamb cutlets immediately with your choice of side dishes and garnished with fresh herbs.
