Instructions
Step 1: Marinate the Lamb

- In a small bowl, combine olive oil, minced garlic, rosemary, thyme, lemon zest, salt, and pepper.

- Rub the mixture over the lamb cutlets, ensuring they are evenly coated.

- Cover and let them marinate in the refrigerator for at least 30 minutes, or up to 4 hours for maximum flavor.
Step 2: Heat the Pan or Grill

- Heat a large skillet, grill pan, or barbecue over medium-high heat. Add a drizzle of olive oil or a knob of butter to the pan.
Step 3: Cook the Lamb Cutlets
