Description

Jamie Oliver’s Peri Peri Chicken is a flavorful dish where chicken is marinated in a homemade Peri Peri sauce, then grilled or baked to perfection. The sauce, a blend of chili, garlic, lemon, and spices, infuses the chicken with a spicy, tangy flavor that’s both robust and addictive.

  • 4 chicken thighs, bone-in and skin-on
  • 2 red chilies, roughly chopped (adjust to taste)
  • 4 garlic cloves, peeled
  • 1 tablespoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 lemon, zest and juice
  • 2 tablespoons red wine vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

Step 1: Prepare the Peri Peri Sauce

    • Blend the Ingredients: In a blender or food processor, combine the chopped red chilies, garlic cloves, smoked paprika, oregano, cumin, lemon zest, lemon juice, red wine vinegar, and olive oil. Blend until smooth.

    • Season the Sauce: Taste the sauce and season with salt and pepper to your liking. Adjust the heat by adding more chilies if desired.

Step 2: Marinate the Chicken

    • Marinate the Chicken: Place the chicken thighs in a large bowl or a resealable plastic bag. Pour the Peri Peri sauce over the chicken, ensuring each piece is well coated. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for a deeper flavor.

Step 3: Cook the Chicken

    • Preheat the Grill or Oven: Preheat your grill to medium-high heat or your oven to 200°C (400°F).

    • Grill Method: If grilling, place the chicken thighs skin-side down on the grill. Cook for 6-8 minutes on each side, or until the skin is crispy and the chicken is cooked through.

    • Oven Method: If using the oven, place the chicken thighs on a baking tray lined with parchment paper. Bake for 35-40 minutes, or until the chicken is cooked through and the skin is golden and crispy.

Step 4: Serve

    • Garnish and Serve: Once cooked, remove the chicken from the grill or oven and let it rest for a few minutes. Garnish with chopped fresh cilantro and serve with your choice of sides.
