- 2 red chilies, roughly chopped (adjust to taste)
- 4 garlic cloves, peeled

- 1 lemon, zest and juice
- 2 tablespoons red wine vinegar
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)

Step 1: Prepare the Peri Peri Sauce

- Blend the Ingredients: In a blender or food processor, combine the chopped red chilies, garlic cloves, smoked paprika, oregano, cumin, lemon zest, lemon juice, red wine vinegar, and olive oil. Blend until smooth.

- Season the Sauce: Taste the sauce and season with salt and pepper to your liking. Adjust the heat by adding more chilies if desired.
Step 2: Marinate the Chicken

- Marinate the Chicken: Place the chicken thighs in a large bowl or a resealable plastic bag. Pour the Peri Peri sauce over the chicken, ensuring each piece is well coated. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for a deeper flavor.
