Ingredients

  • Frozen or Fresh Peas: 600g (about 1.3 lbs)
  • Fresh Mint Leaves: A large handful, roughly chopped
  • Onion: 1 medium, finely chopped
  • Garlic: 2 cloves, minced
  • Vegetable Stock: 1 liter (4 cups)
  • Olive Oil or Butter: 2 tablespoons
  • Double Cream (optional): 100ml (about 1/3 cup)
  • Salt and Pepper: To taste
  • Lemon Juice: A squeeze (optional)

Instructions

Step 1: Sauté the Onion and Garlic

  • Heat the Olive Oil or Butter: In a large pot, heat the olive oil or butter over medium heat.
  • Cook the Onion and Garlic: Add the chopped onion and cook for 5-7 minutes, stirring occasionally, until softened and translucent. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

Step 2: Add the Peas and Stock

  • Add the Peas: Stir in the peas and cook for 2-3 minutes to let them soften slightly.
  • Pour in the Stock: Add the vegetable stock and bring the soup to a simmer. Cook for 5-7 minutes, until the peas are tender.

Step 3: Blend the Soup

  • Remove from Heat: Take the pot off the heat and let it cool for a couple of minutes.
  • Blend the Soup: Using an immersion blender, blend the soup until smooth. If using a regular blender, blend in batches, being careful not to overfill the blender.

Step 4: Add the Mint

  • Stir in the Mint: Add the fresh mint to the blended soup and stir well. Blend again if needed to fully incorporate the mint.

Step 5: Add Cream (Optional)

  • Add the Cream: Stir in the double cream for a richer, creamier texture. If you prefer a lighter soup, you can skip this step.
  • Season: Taste the soup and season with salt, pepper, and a squeeze of lemon juice for brightness.
