    • 3 tablespoons extra virgin olive oil

    • 1 teaspoon dried oregano

    • Salt and pepper to taste

    • Fresh basil or parsley, chopped (optional, for garnish)

For the Feta Parcels:

    • 200g feta cheese block, cut into 4 pieces

    • 4 sheets of phyllo pastry

    • 2 tablespoons olive oil or melted butter

    • Honey, for drizzling (optional)

    • Sesame seeds, for sprinkling (optional)


Instructions

Step 1: Prepare the Feta Parcels

  1. Preheat the Oven: Preheat your oven to 180°C (350°F).
  2. Prepare the Phyllo Pastry: Lay out one sheet of phyllo pastry on a clean surface. Brush lightly with olive oil or melted butter.
  3. Wrap the Feta: Place a piece of feta cheese in the center of the phyllo sheet. Fold the edges over the feta to create a parcel, ensuring the cheese is fully enclosed. Repeat with the remaining feta pieces.
  4. Bake the Parcels: Place the feta parcels on a baking sheet and bake for 15-20 minutes or until golden and crispy. Optional: Drizzle with honey and sprinkle with sesame seeds before serving for added flavor.

Step 2: Prepare the Greek Salad

  1. Chop the Vegetables: In a large bowl, combine the chopped tomatoes, cucumber, red onion, and green bell pepper.
