Description
Jamie Oliver Crème Fraîche Potato Salad is a chilled potato salad made with boiled potatoes, crème fraîche, fresh herbs, and simple seasonings. Unlike mayonnaise-based potato salads, it has a lighter texture and a subtle tangy flavor.
Ingredients
For the Potato Salad

- 1 kg baby potatoes or new potatoes

- 200 g crème fraîche

- 2 tablespoons extra virgin olive oil

- 1 tablespoon lemon juice

- 3 spring onions, finely sliced

- 2 tablespoons fresh chives, chopped

- 2 tablespoons fresh parsley, chopped

- Salt, to taste

- Black pepper, to taste

Instructions
Place the potatoes in a large saucepan and cover with cold salted water. Bring to a boil and cook for 15–20 minutes until fork-tender.
Drain the potatoes and allow them to cool for about 10 minutes. They should still be slightly warm when mixed with the dressing.
In a large mixing bowl, combine the crème fraîche, olive oil, lemon juice, salt, and black pepper. Stir until smooth and creamy.
Mix the spring onions, chopped chives, and parsley into the dressing. This adds freshness and color to the salad.
Cut larger potatoes into bite-sized pieces while leaving smaller ones whole. Add them to the dressing and gently toss until evenly coated.
Let the salad rest for at least 20 minutes before serving. Garnish with extra herbs and lemon zest if desired.
