Description

Chicken Milanese is an Italian dish made by coating thin chicken cutlets in breadcrumbs and frying them until golden and crispy. Jamie Oliver’s version keeps it simple and flavorful, using fresh herbs and high-quality ingredients for a classic taste.

    • Salt and pepper to taste

    • 1 cup all-purpose flour

    • 2 large eggs, beaten

    • 1 cup breadcrumbs (preferably panko for extra crunch)

    • Zest of 1 lemon (optional, for added freshness)

    • 2 tablespoons fresh parsley, chopped

Instructions

Step 1: Prepare the Chicken

Place the chicken breasts between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, pound the chicken to an even thickness of about 1/2 inch. This helps it cook evenly and quickly.

Step 2: Season and Set Up Breading Station

Season both sides of the chicken with salt and pepper. Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, grated Parmesan, lemon zest, and chopped parsley.

Step 3: Bread the Chicken

Dredge each chicken cutlet in the flour, shaking off any excess. Then, dip it in the beaten eggs, making sure it’s fully coated. Finally, press the chicken into the breadcrumb mixture, coating both sides well. Set aside on a plate.

Step 4: Fry the Chicken

In a large skillet, heat a generous amount of olive oil over medium heat. Once hot, add the breaded chicken cutlets to the pan, cooking for 3-4 minutes per side, or until golden brown and cooked through. The chicken should be crispy on the outside and juicy on the inside.

Step 5: Serve

Transfer the chicken cutlets to a plate lined with paper towels to drain any excess oil. Serve hot, with fresh lemon wedges and a side salad, or as desired.
