Description

Jamie Oliver’s American Pancakes are thick, fluffy pancakes made from a simple batter of flour, eggs, milk, and baking powder. These pancakes are perfect for stacking and serving with a variety of toppings like syrup, fruit, or butter.

    • 115g plain flour

    • 1 heaped teaspoon baking powder

    • 140ml milk

    • A pinch of salt

Instructions

Step 1: Prepare the Batter

    1. Separate the eggs: In two separate bowls, crack the eggs and separate the yolks from the whites.

    1. Mix the dry ingredients: In the bowl with the egg yolks, add the flour, baking powder, and a pinch of salt. Whisk together until well combined.

    1. Add the milk: Gradually pour the milk into the flour mixture, whisking until smooth to form the pancake batter.

Step 2: Whisk the Egg Whites

    1. Whip the egg whites: In the second bowl, whisk the egg whites until they form stiff peaks. You can use an electric mixer for this step to make it easier.

    1. Fold the egg whites into the batter: Gently fold the whipped egg whites into the pancake batter, being careful not to knock out too much air. This will give your pancakes their light and fluffy texture.

Step 3: Cook the Pancakes

    1. Heat the pan: Place a non-stick frying pan or griddle over medium heat and add a small knob of butter.

    1. Pour the batter: Once the butter has melted, pour a ladleful of batter into the pan to form a pancake. You can make them small or large depending on your preference.
