- 1 whole chicken (about 1.5kg/3.3lbs), spatchcocked

- 2 lemons, halved

- 2 teaspoons smoked paprika

- 2 tablespoons olive oil

- 4 sprigs of fresh rosemary

Step 1: Preheat the Oven

- Preheat your oven to 200°C (400°F).
Step 2: Prepare the Chicken

- Using kitchen scissors, remove the backbone of the chicken. Flatten it by pressing down firmly on the breastbone.
Step 3: Season the Chicken

- Rub the chicken all over with olive oil, smoked paprika, salt, and pepper. Place the halved lemons and rosemary sprigs under and around the chicken on a large baking tray.
Step 4: Roast the Chicken

- Roast in the preheated oven for 45-50 minutes, or until the chicken is golden and cooked through. A meat thermometer inserted into the thickest part of the thigh should read 75°C (165°F).
Step 5: Rest and Serve

- Let the chicken rest for 10 minutes before carving. Squeeze the roasted lemons over the chicken for an extra burst of flavor and serve with your choice of sides.
