Ingredients
Scale
-
- 500g (1 lb) cooked leftover meat (turkey, chicken, beef, or pork), shredded or chopped
-
- 1 onion, finely chopped
-
- 2 garlic cloves, minced
-
- 2 tablespoons olive oil or butter
-
- 200g (7 oz) mixed leftover vegetables (carrots, peas, green beans, etc.)
-
- 2 tablespoons plain flour
-
- 500ml (2 cups) chicken or beef stock
-
- 150ml (½ cup) double cream
-
- 1 teaspoon Dijon mustard (optional)
-
- Salt and freshly ground black pepper to taste
-
- 1 sheet of ready-made puff pastry
-
- 1 egg, beaten (for egg wash)
Instructions
Step 1: Prepare the Filling
-
- Heat olive oil or butter in a large skillet over medium heat.
-
- Sauté the chopped onion and garlic for 3-4 minutes until softened and fragrant.
-
- Add the leftover vegetables and shredded meat, stirring well to combine.
Step 2: Make the Sauce
-
- Sprinkle the plain flour over the meat and vegetables and stir for 2 minutes to coat everything evenly.
-
- Gradually pour in the stock, stirring constantly to prevent lumps.
-
- Add the double cream and Dijon mustard, stirring until the sauce is thick and creamy.
-
- Season with salt and pepper to taste. Let the filling simmer for 5 minutes, then set aside to cool slightly.
Step 3: Assemble the Pie
-
- Preheat the oven to 200°C (400°F) or 180°C (350°F) for fan ovens.
-
- Transfer the pie filling to a baking dish.
-
- Roll out the puff pastry and place it over the top of the filling, trimming any excess.
-
- Crimp the edges with a fork to seal, and cut a small slit in the center to allow steam to escape.
-
- Brush the pastry with beaten egg to achieve a golden finish.
Step 4: Bake the Pie
-
- Bake the pie in the preheated oven for 25-30 minutes, or until the pastry is puffed and golden brown.
Step 5: Serve and Enjoy
-
- Let the pie cool slightly before slicing and serving with your favorite sides.
