Description

Jamie Oliver’s Hodgepodge Pie is a flexible recipe that combines leftover meats, vegetables, and gravy into a creamy filling, all topped with a golden, flaky pastry crust. It’s a creative, no-fuss pie that’s perfect for using up what’s in your fridge.

    • 500g (1 lb) cooked leftover meat (turkey, chicken, beef, or pork), shredded or chopped

    • 1 onion, finely chopped

    • 2 garlic cloves, minced

    • 2 tablespoons olive oil or butter

    • 200g (7 oz) mixed leftover vegetables (carrots, peas, green beans, etc.)

    • 2 tablespoons plain flour

    • 500ml (2 cups) chicken or beef stock

    • 150ml (½ cup) double cream

    • 1 teaspoon Dijon mustard (optional)

    • Salt and freshly ground black pepper to taste

    • 1 sheet of ready-made puff pastry

    • 1 egg, beaten (for egg wash)


Instructions

Step 1: Prepare the Filling

    • Heat olive oil or butter in a large skillet over medium heat.

    • Sauté the chopped onion and garlic for 3-4 minutes until softened and fragrant.

    • Add the leftover vegetables and shredded meat, stirring well to combine.

Step 2: Make the Sauce

    • Sprinkle the plain flour over the meat and vegetables and stir for 2 minutes to coat everything evenly.

    • Gradually pour in the stock, stirring constantly to prevent lumps.

    • Add the double cream and Dijon mustard, stirring until the sauce is thick and creamy.

    • Season with salt and pepper to taste. Let the filling simmer for 5 minutes, then set aside to cool slightly.

Step 3: Assemble the Pie

    • Preheat the oven to 200°C (400°F) or 180°C (350°F) for fan ovens.

    • Transfer the pie filling to a baking dish.

    • Roll out the puff pastry and place it over the top of the filling, trimming any excess.

    • Crimp the edges with a fork to seal, and cut a small slit in the center to allow steam to escape.

    • Brush the pastry with beaten egg to achieve a golden finish.

Step 4: Bake the Pie

    • Bake the pie in the preheated oven for 25-30 minutes, or until the pastry is puffed and golden brown.

Step 5: Serve and Enjoy

    • Let the pie cool slightly before slicing and serving with your favorite sides.
