Jamie Oliver’s Glazed Carrots are a quick and easy side dish made by cooking carrots until tender, then coating them in a glaze of butter, honey, and fresh herbs. This dish enhances the natural sweetness of the carrots and adds a beautiful shine, making it perfect for any meal.
Ingredients
- 1 lb (450g) carrots, peeled and cut into batons or left whole if small
- 2 tablespoons unsalted butter
- 1 tablespoon honey or maple syrup
- Salt and black pepper, to taste
- Fresh thyme or parsley, chopped, for garnish
Instructions
If your carrots are large, peel and slice them into batons. Small, thin carrots can be left whole.
In a large skillet, add the carrots and cover with water. Bring to a boil over medium heat and cook for about 5-7 minutes, or until the carrots are just tender. Drain any remaining water from the skillet.
Return the skillet to the stove over low heat. Add the butter and honey to the carrots, stirring to coat them evenly. Cook for an additional 3-5 minutes, allowing the glaze to thicken slightly and coat the carrots.
Season the carrots with salt and black pepper to taste. Sprinkle with fresh thyme or parsley for a pop of color and extra flavor.
Transfer the glazed carrots to a serving dish. Serve warm and enjoy alongside your favorite main courses.
