- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 150g (5 oz) unsalted butter, softened
- 150g (5 oz) light brown sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 300g (10 oz) mixed dried fruits (raisins, sultanas, cherries, etc.)
- 100g (3.5 oz) mixed nuts (optional)
- Zest of 1 orange and 1 lemon
- 100ml (⅓ cup) orange juice or tea
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground cloves
- A pinch of salt

- Apricot jam for glazing
- Marzipan or icing for festive decoration
Instructions
Step 1: Soak the Fruits
- Combine the dried fruits, orange juice (or tea), and citrus zest in a bowl.
- Let the mixture soak for at least 2 hours, or overnight for the best flavor.
Step 2: Prepare the Baking Equipment
- Preheat the oven to 160°C (320°F) or 140°C (285°F) for fan ovens.
- Grease and line a 20cm (8-inch) round cake tin with parchment paper.
Step 3: Cream the Butter and Sugar
- In a large mixing bowl, beat the butter and light brown sugar until light and fluffy.
- Add the vanilla extract and mix well.
Step 4: Add the Eggs
- Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
Step 5: Combine Dry Ingredients
- In a separate bowl, sift together the plain flour, baking powder, baking soda, spices, and salt.
Step 6: Mix the Batter
- Gradually fold the dry ingredients into the wet mixture, alternating with the soaked fruit mixture (including any remaining liquid).
- Stir in the mixed nuts if using, ensuring an even distribution.
Step 7: Bake the Cake
- Pour the batter into the prepared cake tin, leveling the top with a spatula.
- Bake in the preheated oven for 90 minutes, or until a skewer inserted into the center comes out clean.
- Let the cake cool in the tin for 10 minutes before transferring to a wire rack.
Step 8: Add Optional Glaze or Decorations
- Brush the top of the cooled cake with apricot jam for a glossy finish.
- Decorate with marzipan or icing if desired for a festive touch.
