Ingredients

    • 500ml fish or vegetable stock

    • 200g mixed fresh fish fillets (such as cod, haddock, or salmon), cut into chunks

    • 100g prawns (optional)

    • Salt and freshly ground black pepper, to taste

    • Zest and juice of 1 lemon


Instructions

1. Prepare the Base

  • In a large, shallow saucepan, heat the olive oil over medium-high heat. Add the sliced garlic and chopped chili, if using, and sauté for 1-2 minutes until the garlic is golden and fragrant.

2. Add Tomatoes and Basil Stems

  • Pour in the canned tomatoes and add the chopped basil stems. Stir well and cook for a few minutes to let the flavors meld. Season with salt and pepper to taste.

3. Pour in the Stock

  • Add the fish or vegetable stock to the pan and bring it to a gentle simmer. This will form the base of the stew and give it a rich flavor.

4. Add the Fish and Prawns

  • Carefully add the chunks of fish fillets and prawns to the simmering liquid. Let the stew cook for 4-5 minutes, or until the fish is just cooked through and flakes easily. Be careful not to overcook, as the fish will become dry.

5. Add Lemon Zest and Juice

  • Stir in the lemon zest and juice for a bright, fresh flavor. Taste and adjust the seasoning if necessary.

6. Serve

  • Ladle the stew into bowls, garnishing with fresh basil leaves and a drizzle of extra virgin olive oil. Serve immediately with crusty bread for dipping.
