Description

Jamie Oliver’s Curry Sauce is a fragrant and flavorful base made with onions, garlic, ginger, tomatoes, and a blend of spices. It’s a quick and easy way to create delicious curries tailored to your preferences.


Ingredients

    • 2 tablespoons olive oil

    • 2 medium onions, finely chopped

    • 3 garlic cloves, minced

    • 1 thumb-sized piece of ginger, grated

    • 12 fresh chilies, finely chopped (adjust to taste)

    • 1 teaspoon ground turmeric

    • 1 teaspoon ground cumin

    • 1 teaspoon ground coriander

    • 1 teaspoon garam masala

    • 400g (14 oz) canned diced tomatoes

    • 200ml (¾ cup) coconut milk or water

    • Salt and freshly ground black pepper to taste

    • Fresh coriander (cilantro) leaves for garnish


Instructions

Step 1: Sauté the Aromatics

    • Heat olive oil in a large pan over medium heat. Add the onions and sauté for 5-7 minutes until softened and golden.

    • Stir in the garlic, ginger, and chilies, and cook for 2 minutes until fragrant.

Step 2: Add the Spices

    • Sprinkle the turmeric, cumin, coriander, and garam masala over the onion mixture. Stir well and cook for 1-2 minutes to toast the spices.

Step 3: Add the Tomatoes and Simmer

    • Pour in the canned tomatoes and bring to a gentle simmer. Cook for 10 minutes, stirring occasionally, until the sauce thickens slightly.

Step 4: Blend and Add Liquid

    • Use an immersion blender to blend the sauce until smooth (optional for a chunkier texture).

    • Stir in the coconut milk or water, season with salt and pepper, and simmer for an additional 5 minutes.

Step 5: Customize and Serve

    • Add your choice of protein or vegetables to the sauce and simmer until cooked through. Garnish with fresh coriander and serve hot with rice or naan bread.
