- 2 tablespoons olive oil

- 2 medium onions, finely chopped

- 3 garlic cloves, minced

- 1 thumb-sized piece of ginger, grated

- 1–2 fresh chilies, finely chopped (adjust to taste)

- 1 teaspoon ground turmeric

- 1 teaspoon ground cumin

- 1 teaspoon ground coriander

- 1 teaspoon garam masala

- 400g (14 oz) canned diced tomatoes

- 200ml (¾ cup) coconut milk or water

- Salt and freshly ground black pepper to taste

- Fresh coriander (cilantro) leaves for garnish
Instructions
Step 1: Sauté the Aromatics

- Heat olive oil in a large pan over medium heat. Add the onions and sauté for 5-7 minutes until softened and golden.

- Stir in the garlic, ginger, and chilies, and cook for 2 minutes until fragrant.
Step 2: Add the Spices

- Sprinkle the turmeric, cumin, coriander, and garam masala over the onion mixture. Stir well and cook for 1-2 minutes to toast the spices.
Step 3: Add the Tomatoes and Simmer

- Pour in the canned tomatoes and bring to a gentle simmer. Cook for 10 minutes, stirring occasionally, until the sauce thickens slightly.
Step 4: Blend and Add Liquid

- Use an immersion blender to blend the sauce until smooth (optional for a chunkier texture).

- Stir in the coconut milk or water, season with salt and pepper, and simmer for an additional 5 minutes.
Step 5: Customize and Serve

- Add your choice of protein or vegetables to the sauce and simmer until cooked through. Garnish with fresh coriander and serve hot with rice or naan bread.
