Description

Jamie Oliver’s Cucumber Pickle is a quick-pickling recipe that involves slicing cucumbers and marinating them in a vinegar-based solution with sugar, salt, and spices. The result is a tangy, slightly sweet pickle that adds a burst of flavor to any dish.

  • 1 large cucumber (or 2 small cucumbers), thinly sliced
  • 1 small onion, thinly sliced (optional, for extra flavor)
  • 1/2 cup white vinegar (or apple cider vinegar for a milder flavor)
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon mustard seeds (optional, for added flavor)
  • 1/2 teaspoon chili flakes or a few peppercorns (optional, for a hint of heat)
  • Fresh dill or parsley sprigs (optional, for garnish)

Instructions

Step 1: Prepare the Cucumber

Thinly slice the cucumber using a knife or mandolin for even, thin slices. If using onion, slice it thinly as well. Place the cucumber (and onion, if using) in a medium bowl.

Step 2: Make the Pickling Brine

In a small saucepan, combine the vinegar, sugar, salt, mustard seeds, and chili flakes or peppercorns (if using). Heat over low to medium heat, stirring occasionally, until the sugar and salt dissolve. Remove from heat and let the brine cool for a few minutes.

Step 3: Pour the Brine over the Cucumber

Pour the warm pickling brine over the sliced cucumber and onion in the bowl. Gently toss to ensure that all the slices are coated with the brine.

Step 4: Marinate

Cover the bowl with plastic wrap or transfer the mixture to a jar. Let it marinate in the refrigerator for at least 30 minutes to 1 hour. The flavors will continue to develop the longer it sits.

Step 5: Serve or Store

Serve the cucumber pickle as a side or topping for sandwiches, burgers, or salads. Garnish with fresh dill or parsley for added flavor. Store any leftovers in an airtight container in the refrigerator for up to 1 week.
