    • 300g mixed seafood (such as shrimp, scallops, squid, or mussels)

    • 300g pasta (linguine, fettuccine, or spaghetti)

    • 2 tablespoons olive oil

    • 2 cloves garlic, minced

    • 1 small onion, finely chopped

    • 1 cup heavy cream

    • 1/2 cup vegetable or fish stock

    • Salt and pepper to taste

    • 1 tablespoon fresh parsley, chopped

    • 1 tablespoon fresh basil, chopped (optional)

    • Lemon wedges (for serving)

    • Grated Parmesan cheese (optional)


Instructions

Step 1: Cook the Pasta

Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside, reserving a little pasta water in case you need it to adjust the sauce later.

Step 2: Sauté the Aromatics

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant, being careful not to burn the garlic.

Step 3: Add the Seafood

Add the mixed seafood to the skillet. Sauté for 3-5 minutes until the seafood is cooked through and turns opaque.

Step 4: Create the Creamy Sauce

Reduce the heat to low, then add the heavy cream and vegetable or fish stock to the skillet. Stir gently to combine with the seafood and aromatics. Season with salt and pepper to taste, and let the sauce simmer for 5-7 minutes until it thickens slightly.

Step 5: Combine Pasta and Sauce

Add the cooked pasta to the skillet, tossing it in the creamy sauce until well-coated. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency.

Step 6: Garnish and Serve

Remove from heat and sprinkle with chopped parsley and basil, if using. Serve with lemon wedges for squeezing over the pasta and a sprinkle of grated Parmesan if desired. Enjoy the pasta warm.
