Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 200°C (400°F). Grease an 8-inch square baking dish or a cast-iron skillet with butter or oil.

Step 2: Mix the Dry Ingredients

  • In a large mixing bowl, whisk together the cornmeal, flour, baking powder, baking soda, salt, and sugar (if using).

Step 3: Combine the Wet Ingredients

  • In a separate bowl, beat the eggs, then whisk in the buttermilk, melted butter, and vegetable oil until well combined.
