 - 2 large eggs
 - 1 cup buttermilk (or 1 cup milk + 1 tablespoon lemon juice)
 - 1/4 cup unsalted butter, melted and cooled
 - 1/4 cup vegetable oil
 
Optional Add-Ins:
- 1/2 cup grated cheddar cheese
 - 1/4 cup chopped jalapeños for spice
 - 1/4 cup sweet corn kernels
 
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 200°C (400°F). Grease an 8-inch square baking dish or a cast-iron skillet with butter or oil.
 
Step 2: Mix the Dry Ingredients
- In a large mixing bowl, whisk together the cornmeal, flour, baking powder, baking soda, salt, and sugar (if using).
 
Step 3: Combine the Wet Ingredients
- In a separate bowl, beat the eggs, then whisk in the buttermilk, melted butter, and vegetable oil until well combined.
 
Step 4: Make the Batter
- Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix, as this can make the cornbread dense. If using add-ins like cheese or jalapeños, fold them in now.
 
Step 5: Bake the Cornbread
- Pour the batter into the prepared baking dish or skillet, spreading it evenly. Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
 
Step 6: Cool and Serve
- Let the cornbread cool for 5-10 minutes before slicing. Serve warm with butter, honey, or your favorite topping.
