Ingredients
- 1/2 medium red cabbage, finely shredded
- 2 medium carrots, grated
- 1 small red onion, thinly sliced
- 1 green apple, grated (optional, for sweetness)
- 150ml mayonnaise (use vegan mayo for a vegan option)
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar or lemon juice
- Salt and pepper to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions
Shred the red cabbage finely and place it in a large mixing bowl. Grate the carrots and add them to the bowl along with the thinly sliced red onion. If using, grate the green apple and add it for a touch of sweetness.
In a separate small bowl, mix together the mayonnaise, Dijon mustard, and apple cider vinegar or lemon juice. Season with salt and pepper to taste, adjusting as needed.
Pour the dressing over the shredded vegetables. Use tongs or a large spoon to toss everything together until the cabbage, carrots, and onion are evenly coated in the dressing.
Garnish with freshly chopped parsley if desired, and transfer the coleslaw to a serving bowl. Serve immediately, or refrigerate for 15-20 minutes for a chilled coleslaw.
