Description

Jamie Oliver Chocolate Mousse is a classic French-inspired dessert made by folding melted chocolate into whipped cream and whipped eggs to create a light yet rich texture.

For the Chocolate Mousse

    • 200g good-quality dark chocolate (70% cocoa), chopped

    • 3 large eggs, separated

    • 2 tablespoons caster sugar

    • 300ml double cream

    • 1 teaspoon vanilla extract

    • A pinch of sea salt

    • Fresh raspberries or strawberries

Instructions

Step 1: Melt the Chocolate

Place the chopped chocolate in a heatproof bowl over a saucepan of gently simmering water. Stir until completely melted, then remove from the heat and allow it to cool slightly.

Step 2: Whip the Cream

In a chilled bowl, whip the double cream until soft peaks form. Avoid overwhipping, as the mousse should remain light and smooth.

Step 3: Beat the Egg Yolks

Whisk the egg yolks with the vanilla extract until smooth. Stir the slightly cooled melted chocolate into the yolks until fully combined.

Step 4: Whisk the Egg Whites

In a separate clean bowl, whisk the egg whites with a pinch of salt until soft peaks form. Gradually add the caster sugar and continue whisking until glossy, stiff peaks develop.

Step 5: Fold Everything Together

Fold the whipped cream into the chocolate mixture using gentle movements. Then carefully fold in the whipped egg whites until no white streaks remain. Be careful not to knock out too much air.

Step 6: Chill the Mousse

Divide the mousse among serving glasses or bowls. Refrigerate for at least 2 hours, or until fully set.

Step 7: Garnish and Serve

Decorate with chocolate shavings, fresh berries, whipped cream, or a light dusting of cocoa powder before serving.
