Scale
For the Dough:
-
- 500g (4 cups) strong bread flour
-
- 1 teaspoon salt
-
- 2 teaspoons sugar
-
- 7g (1 packet) instant yeast
-
- 325ml (1 1/3 cups) warm water
For the Filling:
-
- 200g (1 cup) dark chocolate, chopped or chocolate spread
-
- 50g (1/4 cup) hazelnuts, chopped (optional)
-
- 1 teaspoon cinnamon (optional)
For the Topping:
-
- 1 egg, beaten (for brushing)
-
- Icing sugar (for dusting)
Instructions
Step 1: Make the Dough
-
- In a large mixing bowl, combine the bread flour, salt, and sugar. Add the yeast to one side of the bowl and the salt to the other to avoid direct contact.
-
- Gradually pour in the warm water, mixing with your hands or a wooden spoon until the dough comes together.
-
- Knead the dough on a floured surface for 8-10 minutes until smooth and elastic. Place it in a lightly oiled bowl, cover, and let it rise for 1 hour or until doubled in size.
Step 2: Preheat the Oven
-
- Preheat your oven to 220°C (425°F) and line a baking tray with parchment paper.
Step 3: Prepare the Dough
-
- Once the dough has risen, divide it into 4 equal portions. Roll each portion into a thin circle, about 20cm (8 inches) in diameter.
Step 4: Add the Filling
-
- Place a portion of chopped dark chocolate or a dollop of chocolate spread on one half of each dough circle. Add hazelnuts and a sprinkle of cinnamon if desired.
Step 5: Fold and Seal
-
- Fold the dough over the filling to create a semi-circle. Press the edges firmly to seal, and crimp the edges with a fork for extra security.
Step 6: Brush and Bake
-
- Place the calzones on the prepared baking tray. Brush the tops with beaten egg for a golden finish.
-
- Bake in the preheated oven for 12-15 minutes or until golden and puffed.
Step 7: Dust and Serve
-
- Allow the calzones to cool slightly before dusting with icing sugar. Serve warm for the best gooey chocolate experience.
