Description

Jamie Oliver’s Chocolate and Banana Cake is a deliciously moist cake made with ripe bananas, cocoa powder, and chocolate chunks. It’s a perfect treat that balances natural sweetness from bananas with the richness of chocolate, making it ideal for any occasion.

Ingredients

Scale

  • 3 ripe bananas, mashed
  • 1/2 cup unsalted butter, melted (plus extra for greasing the pan)
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chunks or chocolate chips

Instructions

Step 1: Preheat the Oven

Preheat your oven to 180°C (350°F). Grease and line a 9-inch round or square baking pan with parchment paper.

Step 2: Prepare the Banana Mixture

In a large mixing bowl, mash the bananas until smooth. Add the melted butter, granulated sugar, brown sugar, eggs, and vanilla extract. Whisk until all ingredients are well combined and the mixture is smooth.

Step 3: Sift the Dry Ingredients

In a separate bowl, sift together the flour, cocoa powder, baking soda, and salt. This ensures the cake has a light texture and evenly distributed ingredients.

Step 4: Combine Wet and Dry Ingredients

Gradually fold the dry ingredients into the banana mixture, stirring gently until just combined. Be careful not to overmix, as this can make the cake dense.

Step 5: Add Chocolate Chunks

Fold in the chocolate chunks or chocolate chips until they are evenly distributed throughout the batter.

Step 6: Pour into the Pan and Bake

Pour the batter into the prepared baking pan, smoothing the top with a spatula. Bake in the preheated oven for 40-50 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.

Step 7: Cool and Serve

Allow the cake to cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely. Serve warm or at room temperature, and enjoy!
