Jamie Oliver’s Chicken Wing Gravy is a homemade gravy made by roasting chicken wings with vegetables, simmering them with stock, and blending the mixture to create a smooth and flavorful sauce.

- 6 chicken wings
- 1 large onion, roughly chopped
- 1 carrot, roughly chopped
- 2 celery sticks, roughly chopped
- 2 tablespoons plain flour
- 4 cups chicken stock
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
Step 1: Roast the Chicken Wings
- Preheat the oven to 200°C (400°F).
- Place the chicken wings, onion, carrot, and celery on a baking tray. Drizzle with olive oil, season with salt and pepper, and toss to coat.
- Roast for 40-45 minutes, or until the wings are golden brown.
Step 2: Make the Gravy Base
- Transfer the roasted wings and vegetables to a large saucepan. Place the tray over medium heat and add a splash of water to deglaze, scraping up any browned bits. Pour this liquid into the saucepan.
Step 3: Add Flour and Stock
- Sprinkle the flour over the wings and vegetables in the saucepan. Stir well to coat everything evenly.
- Gradually add the chicken stock, stirring constantly to prevent lumps.
Step 4: Simmer the Gravy
- Bring the mixture to a boil, then reduce the heat and simmer for 20-25 minutes. Stir occasionally to ensure it doesn’t stick.
Step 5: Strain and Blend
- Use a fine mesh sieve to strain the gravy into a clean saucepan, pressing down on the solids to extract all the flavor. Discard the solids or save them for another use.
- For an ultra-smooth texture, blend the strained gravy using an immersion blender.
Step 6: Adjust Seasoning and Serve
- Taste the gravy and adjust the seasoning with salt and pepper. Serve hot over your favorite dishes.
