Jamie Oliver’s Chicken Tomato Pasta is a straightforward pasta dish featuring juicy chicken, a flavorful tomato-based sauce, and your choice of pasta. With garlic, fresh basil, and a touch of Parmesan, this recipe has a comforting, homemade taste that’s perfect for any occasion.
Ingredients
- 300g pasta (penne, rigatoni, or fusilli)
- 2 tablespoons olive oil
- 2 chicken breasts, diced
- Salt and pepper to taste
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 can (400g) chopped tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- A pinch of red pepper flakes (optional, for heat)
- Fresh basil leaves, torn (for garnish)
- Grated Parmesan cheese (for garnish)
Instructions
Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside, reserving a bit of pasta water to adjust the sauce if needed.
While the pasta is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Season the diced chicken with salt and pepper, then add it to the skillet. Cook for about 5-7 minutes, until the chicken is golden and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add another tablespoon of olive oil if needed. Add the chopped onion and sauté for 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
Stir in the chopped tomatoes, tomato paste, dried oregano, and red pepper flakes (if using). Let the sauce simmer for 8-10 minutes, allowing it to thicken slightly. Season with salt and pepper to taste.
Add the cooked chicken back into the skillet with the sauce. Stir to coat the chicken evenly. Add the cooked pasta to the skillet and toss everything together, adding a splash of reserved pasta water if needed to achieve your desired consistency.
Remove from heat and garnish with fresh basil leaves and grated Parmesan cheese. Serve warm and enjoy!
