- 4 chicken breasts

- 2 tablespoons Dijon mustard

- 1 cup heavy cream

- 2 tablespoons olive oil

- 1 cup chicken stock

Instructions
Season the chicken breasts with salt and pepper on both sides.
Heat olive oil in a skillet over medium heat. Add the chicken and cook for 4-5 minutes on each side until golden brown. Remove and set aside.
In the same skillet, add minced garlic and chopped onion. Sauté for 2-3 minutes until softened.
Stir in the Dijon mustard and thyme. Pour in chicken stock and let it simmer for 5 minutes to reduce slightly.
Slowly add the heavy cream, stirring constantly to create a smooth sauce.
Return the chicken to the skillet. Simmer for 10-12 minutes until the chicken is cooked through and the sauce thickens.
Sprinkle fresh parsley over the dish and serve hot with your choice of sides.
