For the Chicken

    • 2 boneless, skinless chicken breasts

    • 1 tablespoon olive oil

    • 1 teaspoon smoked paprika

    • 1 teaspoon garlic powder

    • 1/2 teaspoon salt

    • 1/2 teaspoon black pepper

    • Juice of 1/2 lemon

For the Coleslaw

    • 200g (2 cups) shredded white cabbage

    • 100g (1 cup) shredded red cabbage

    • 1 large carrot, grated

    • 2 spring onions, sliced

    • 2 tablespoons mayonnaise

    • 1 tablespoon Greek yogurt

    • 1 teaspoon Dijon mustard

    • 1 teaspoon apple cider vinegar

    • 1 teaspoon honey

    • Salt and black pepper to taste


Instructions

Step 1: Prepare the Chicken

    • In a bowl, mix olive oil, smoked paprika, garlic powder, salt, black pepper, and lemon juice.

    • Coat the chicken breasts evenly with the marinade.

Step 2: Cook the Chicken

    • Heat a grill pan or skillet over medium heat.

    • Cook the chicken for 5-6 minutes on each side until golden brown and cooked through.

    • Let it rest for 5 minutes before slicing.

Step 3: Make the Coleslaw

    • In a large bowl, combine shredded white cabbage, red cabbage, grated carrot, and spring onions.

    • In a separate bowl, whisk together mayonnaise, Greek yogurt, Dijon mustard, apple cider vinegar, honey, salt, and black pepper.

    • Pour the dressing over the vegetables and toss well to coat.

Step 4: Serve

    • Slice the chicken and serve alongside the coleslaw.

    • Optionally, served in a sandwich, wrap, or as a salad topping.
