    • 4 cups vegetable or chicken broth

    • 1/2 cup heavy cream or coconut milk (optional, for extra creaminess)

    • Salt and pepper, to taste

    • Fresh thyme or rosemary, for garnish

    • Optional toppings: croutons, toasted nuts, or a drizzle of olive oil


Instructions

Step 1: Sauté the Vegetables

In a large pot, heat the olive oil or butter over medium heat. Add the chopped onion, garlic, leek, and celery, and sauté for 5-7 minutes until softened and translucent, stirring occasionally.

Step 2: Add the Chestnuts

Add the chestnuts to the pot and stir well to combine with the vegetables. Cook for 2-3 minutes to allow the chestnuts to absorb the flavors.

Step 3: Pour in the Broth

Pour in the vegetable or chicken broth and season with salt and pepper. Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and let the soup cook for 15-20 minutes, allowing the flavors to meld.

Step 4: Blend the Soup

Using an immersion blender, blend the soup until smooth and creamy. Alternatively, transfer the soup in batches to a blender, then return it to the pot. If you prefer a thinner consistency, add more broth as needed.

Step 5: Add Cream (Optional)

Stir in the heavy cream or coconut milk if you desire a richer, creamier texture. Taste and adjust seasoning as needed.

Step 6: Serve

Ladle the soup into bowls and garnish with fresh thyme or rosemary. Add optional toppings like croutons, toasted nuts, or a drizzle of olive oil for added texture and flavor.
