Jamie Oliver’s Cheese Scones are a savory version of classic scones made with sharp cheddar cheese and a bit of mustard powder for flavor. These scones are tender and fluffy, with a golden crust that’s slightly crisp on the outside and soft on the inside.

- 1/4 cup cold unsalted butter, cubed

- 1 cup sharp cheddar cheese, grated

- 1/2 cup milk, plus extra for brushing

- 1 teaspoon mustard powder (optional)

Instructions
Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the self-raising flour, salt, and mustard powder (if using). Add the cold butter and rub it into the flour mixture with your fingertips until it resembles fine crumbs. Stir in the grated cheddar cheese and a pinch of black pepper.
Make a well in the center of the mixture and pour in the milk. Mix gently with a fork or spatula until the dough comes together. Turn the dough out onto a lightly floured surface and knead very briefly, just until smooth.
Pat the dough into a 1-inch thick round. Use a round cutter (about 2 inches) to cut out scones, pressing straight down without twisting. Re-roll scraps to make additional scones if needed.
Place the scones on the prepared baking sheet. Brush the tops lightly with milk for a golden finish.
Bake in the preheated oven for 12-15 minutes, or until the scones are risen and golden brown on top.
Allow the scones to cool slightly on a wire rack. Serve warm with a bit of butter or enjoy on their own.
