- 1 kg potatoes, peeled and cut into chunks

Instructions
1. Cook the Potatoes

- Place the potatoes in a large pot, cover with water, and add a pinch of salt. Bring to a boil, then simmer for 15-20 minutes or until the potatoes are tender and easily pierced with a fork. Drain and return to the pot.
2. Mash the Potatoes

- Add the butter and milk to the potatoes and mash until smooth and creamy. Season with salt and freshly ground black pepper to taste. Stir in the mustard if using for extra flavor.
3. Cook the Onion

- In a small pan, heat the olive oil over medium heat and cook the chopped onion for 5-7 minutes until softened and golden.
4. Combine with Cheese

- Stir the cooked onions and 150g of grated cheese into the mashed potatoes, mixing well until the cheese begins to melt and is evenly distributed throughout the potatoes.
5. Assemble the Pie

- Preheat your oven to 200°C (400°F). Spoon the cheesy mashed potatoes into a baking dish, smoothing the top. Sprinkle extra grated cheese generously over the top to create a golden, crispy crust.
6. Bake the Pie

- Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the top is golden and bubbly.
7. Serve
