Jamie Oliver’s Cauliflower Lasagne is a hearty and flavorful alternative to traditional lasagna. It features creamy cauliflower cheese sauce, lasagne sheets, and a golden, cheesy topping.

- 1 large cauliflower, cut into florets

- 1 onion, finely chopped

- 2 garlic cloves, minced

- 2 tablespoons olive oil

- 1 teaspoon dried thyme

- 500ml (2 cups) milk

- 50g (2 oz) butter

- 50g (2 oz) plain flour

- 200g (7 oz) grated cheddar cheese

- 50g (2 oz) grated Parmesan cheese

- 200g (7 oz) lasagne sheets
-
- Salt and freshly ground black pepper to taste
Optional Add-Ins:

- 1 cup spinach leaves

- 1 teaspoon Dijon mustard for added flavor
Instructions
Step 1: Prepare the Cauliflower

- Boil the cauliflower florets in salted water for 5-7 minutes until tender. Drain and set aside.
Step 2: Make the Cheese Sauce

- Melt the butter in a medium saucepan over low heat. Stir in the flour to form a roux and cook for 1-2 minutes.

- Gradually add the milk while whisking continuously to avoid lumps. Cook for 5-7 minutes until thickened.

- Stir in the grated cheddar cheese, and half of the Parmesan, and season with salt, pepper, and thyme.
Step 3: Sauté the Onion and Garlic

- Heat olive oil in a pan over medium heat. Sauté the onion and garlic until softened and fragrant. Add the cooked cauliflower and mash lightly, leaving some texture. Stir in half of the cheese sauce.
Step 4: Assemble the Lasagne

- Preheat your oven to 200°C (400°F).

- Spread a thin layer of the cheese sauce on the bottom of a baking dish. Add a layer of lasagne sheets, followed by the cauliflower mixture, and more cheese sauce. Repeat the layers, ending with a generous layer of cheese sauce on top.
Step 5: Add the Topping and Bake

- Sprinkle the remaining Parmesan cheese over the top. Bake for 25-30 minutes, or until golden and bubbling.
Step 6: Serve and Enjoy

- Let the lasagne rest for 5 minutes before slicing. Serve hot with a side salad or garlic bread.
