Description

Jamie Oliver’s Butter Bean Mash is a creamy, healthy alternative to mashed potatoes, made by blending butter beans with olive oil, garlic, and seasonings. This simple yet flavorful dish is ideal as a side for various main courses, adding a smooth texture and mild, nutty taste.

    • 2 cans (400g each) butter beans, drained and rinsed

    • 2 tablespoons olive oil

    • 2 cloves garlic, minced

    • Salt and black pepper, to taste

    • Juice of 1/2 lemon (optional, for a touch of brightness)

    • Fresh parsley or thyme, chopped, for garnish


Instructions

Step 1: Sauté the Garlic

In a small skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it. Remove from heat.

Step 2: Mash the Butter Beans

In a large bowl, add the drained butter beans. Using a fork, potato masher, or immersion blender, start mashing the beans until you reach a smooth or slightly chunky consistency, depending on your preference.

Step 3: Add Garlic and Olive Oil

Pour the sautéed garlic and remaining olive oil into the mashed beans. Mix well to incorporate the flavors.

Step 4: Season and Adjust

Add salt, black pepper, and lemon juice (if using) to taste. Stir well, adjusting the seasoning as desired.

Step 5: Serve

Transfer the butter bean mash to a serving bowl. Garnish with fresh parsley or thyme for a touch of color and extra flavor. Serve warm as a side dish
