    • 1 egg, lightly beaten

    • 2 tablespoons plain flour (plus extra for dusting)

    • 2 tablespoons olive oil or butter for frying

    • Salt and freshly ground black pepper to taste

Optional Add-Ins:

    • 1 teaspoon mustard for extra flavor

    • A handful of chopped fresh parsley


Instructions

Step 1: Mix the Ingredients

    • In a large mixing bowl, combine the mashed potatoes, cooked vegetables, onion (if using), beaten egg, and flour. Mix until evenly combined. Season with salt and black pepper.

Step 2: Shape the Patties
