Ingredients
Scale
-
- 2 tablespoons olive oil or butter
-
- 1 onion, chopped
-
- 2 garlic cloves, minced
-
- 500g (1 lb) fresh broccoli, chopped into florets
-
- 4 cups vegetable or chicken stock
-
- 1/2 cup cream or milk (optional)
-
- Salt and freshly ground black pepper to taste
-
- A pinch of nutmeg (optional)
Optional Toppings:
-
- Grated Parmesan cheese
-
- Croutons
-
- A drizzle of olive oil
-
- Chopped fresh herbs (parsley or chives)
Instructions
Step 1: Sauté the Aromatics
-
- Heat olive oil or butter in a large pot over medium heat. Add the chopped onion and garlic, sautéing for 2-3 minutes until fragrant and softened.
Step 2: Add the Broccoli
-
- Stir in the broccoli florets and cook for 2 minutes to coat them with the flavors.
Step 3: Pour the Stock
-
- Add the vegetable or chicken stock, ensuring the broccoli is fully submerged. Bring to a boil, then reduce the heat and simmer for 10-12 minutes until tender.
Step 4: Blend the Soup
-
- Use an immersion blender to puree the soup directly in the pot until smooth. Alternatively, transfer the soup in batches to a countertop blender.
Step 5: Add Cream (Optional)
-
- Stir in the cream or milk for added richness. Season with salt, black pepper, and a pinch of nutmeg if desired.
Step 6: Serve and Garnish
-
- Ladle the soup into bowls and garnish with grated Parmesan, croutons, or fresh herbs. Serve hot with bread or a side salad.
