Description

Jamie Oliver’s Broccoli Soup is a creamy, hearty soup made with fresh broccoli, onions, garlic, and a flavorful stock, finished with cream or milk for a velvety texture.

Ingredients

Scale
    • 2 tablespoons olive oil or butter

    • 1 onion, chopped

    • 2 garlic cloves, minced

    • 500g (1 lb) fresh broccoli, chopped into florets

    • 4 cups vegetable or chicken stock

    • 1/2 cup cream or milk (optional)

    • Salt and freshly ground black pepper to taste

    • A pinch of nutmeg (optional)

Optional Toppings:

    • Grated Parmesan cheese

    • Croutons

    • A drizzle of olive oil

    • Chopped fresh herbs (parsley or chives)

Instructions

Step 1: Sauté the Aromatics

    • Heat olive oil or butter in a large pot over medium heat. Add the chopped onion and garlic, sautéing for 2-3 minutes until fragrant and softened.

Step 2: Add the Broccoli

    • Stir in the broccoli florets and cook for 2 minutes to coat them with the flavors.

Step 3: Pour the Stock

    • Add the vegetable or chicken stock, ensuring the broccoli is fully submerged. Bring to a boil, then reduce the heat and simmer for 10-12 minutes until tender.

Step 4: Blend the Soup

    • Use an immersion blender to puree the soup directly in the pot until smooth. Alternatively, transfer the soup in batches to a countertop blender.

Step 5: Add Cream (Optional)

    • Stir in the cream or milk for added richness. Season with salt, black pepper, and a pinch of nutmeg if desired.

Step 6: Serve and Garnish

    • Ladle the soup into bowls and garnish with grated Parmesan, croutons, or fresh herbs. Serve hot with bread or a side salad.
