    • 500g (1 lb) fresh broad beans (or frozen)

    • 2 tablespoons olive oil

    • 1 clove garlic, finely chopped

    • Zest of 1 lemon

    • Juice of half a lemon

    • 2 tablespoons fresh mint or parsley, chopped

    • 50g (1/2 cup) grated Parmesan or crumbled feta (optional)

    • Salt and black pepper to taste


Instructions

Step 1: Prepare the Broad Beans

    • If using fresh broad beans, remove them from the pods.

    • Boil water in a pot and blanch the beans for 3-4 minutes until tender.

    • Drain and rinse under cold water, then peel off the tough outer skins for a softer texture.

Step 2: Sauté the Garlic

    • Heat olive oil in a pan over medium heat.

    • Add the chopped garlic and sauté for 1 minute until fragrant.

Step 3: Toss the Broad Beans

    • Add the peeled broad beans to the pan and toss to coat in the garlic oil.

    • Stir in the lemon zest, lemon juice, salt, and black pepper.

Step 4: Add Herbs and Cheese

    • Remove from heat and mix in chopped mint or parsley.
