Description

Jamie Oliver’s Blackberry Coulis is a smooth, fruit-based sauce made by blending fresh or frozen blackberries with sugar and lemon juice. It’s strained to remove seeds, resulting in a vibrant, smooth sauce that pairs beautifully with desserts or breakfasts.

    • 250g blackberries (fresh or frozen)

    • 2 tablespoons sugar (adjust to taste)

    • 1 tablespoon lemon juice

    • 2 tablespoons water (optional, for consistency)


Instructions

Step 1: Cook the Blackberries

In a small saucepan, combine the blackberries, sugar, and lemon juice. If you’re using frozen blackberries, you can add them directly to the pan without thawing. Cook over medium heat, stirring occasionally, for 5-7 minutes until the blackberries break down and release their juices.

Step 2: Blend the Mixture

Once the blackberries have softened, remove the pan from the heat. Use a blender or an immersion blender to blend the mixture until smooth. If the coulis is too thick, you can add 1-2 tablespoons of water to reach your desired consistency.

Step 3: Strain the Coulis

To remove the seeds and achieve a smooth sauce, strain the blackberry mixture through a fine-mesh sieve into a bowl. Use the back of a spoon to press the mixture through the sieve, leaving the seeds behind.

Step 4: Cool and Serve

Let the blackberry coulis cool slightly before serving. You can use it warm or cold, depending on your preference. Drizzle it over desserts or store it in an airtight container in the fridge for up to 3 days.
