- 300g fresh or canned cherries (pitted)
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
For the Custard Layer:
- 500ml custard (homemade or store-bought)
- 100g dark chocolate (melted)
For the Whipped Cream Layer:
- 300ml double cream (whipped)
- 1 tablespoon icing sugar
For Garnish:
- Dark chocolate shavings
- Extra cherries for decoration
Instructions
Step 1: Prepare the Chocolate Sponge
- Cut the chocolate sponge cake into small cubes.
- Drizzle cherry liqueur or juice over the cake pieces and set aside.
Step 2: Make the Cherry Layer
- In a saucepan, heat cherries, sugar, and vanilla extract over medium heat.
- Cook for 5 minutes until the cherries soften and release their juices.
- Let the mixture cool before layering.
Step 3: Prepare the Chocolate Custard
- Melt the dark chocolate and stir it into the custard until smooth.
- Let it cool slightly before assembling the trifle.
Step 4: Whip the Cream
- In a bowl, whip double cream with icing sugar until soft peaks form.
Step 5: Assemble the Trifle
- In a trifle dish, add a layer of soaked chocolate sponge.
- Spoon over the cherry mixture, ensuring an even spread.
- Pour the chocolate custard on top, followed by a generous layer of whipped cream.
- Repeat the layers if needed and finish with whipped cream on top.
Step 6: Garnish and Serve
- Sprinkle dark chocolate shavings over the trifle.
- Add a few whole cherries on top for decoration.
- Chill for at least 2 hours before serving.
