For the Chocolate Sponge Layer:

  • 200g chocolate sponge cake (store-bought or homemade)
  • 2 tablespoons cherry liqueur (or cherry juice for a non-alcoholic version)

For the Cherry Layer:

  • 300g fresh or canned cherries (pitted)
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract

For the Custard Layer:

  • 500ml custard (homemade or store-bought)
  • 100g dark chocolate (melted)

For the Whipped Cream Layer:

  • 300ml double cream (whipped)
  • 1 tablespoon icing sugar

For Garnish:

  • Dark chocolate shavings
  • Extra cherries for decoration

Instructions

Step 1: Prepare the Chocolate Sponge

  • Cut the chocolate sponge cake into small cubes.
  • Drizzle cherry liqueur or juice over the cake pieces and set aside.

Step 2: Make the Cherry Layer

  • In a saucepan, heat cherries, sugar, and vanilla extract over medium heat.
  • Cook for 5 minutes until the cherries soften and release their juices.
  • Let the mixture cool before layering.

Step 3: Prepare the Chocolate Custard

  • Melt the dark chocolate and stir it into the custard until smooth.
  • Let it cool slightly before assembling the trifle.

Step 4: Whip the Cream

  • In a bowl, whip double cream with icing sugar until soft peaks form.

Step 5: Assemble the Trifle

  • In a trifle dish, add a layer of soaked chocolate sponge.
  • Spoon over the cherry mixture, ensuring an even spread.
  • Pour the chocolate custard on top, followed by a generous layer of whipped cream.
  • Repeat the layers if needed and finish with whipped cream on top.

Step 6: Garnish and Serve

  • Sprinkle dark chocolate shavings over the trifle.
  • Add a few whole cherries on top for decoration.
  • Chill for at least 2 hours before serving.
