Description

Jamie Oliver’s Beetroot Relish is a tangy, sweet, and earthy condiment that complements a wide range of dishes. It’s the perfect topping for burgers, sandwiches, or roasted meats, and it’s incredibly easy to make with just a few ingredients.


Ingredients

    • 2 medium-sized beets, peeled and grated

    • 1 medium onion, finely chopped

    • 1 tablespoon olive oil

    • 2 tablespoons apple cider vinegar

    • 3 tablespoons brown sugar

    • 1 teaspoon mustard seeds

    • 1/2 teaspoon ground allspice

    • Salt and freshly ground black pepper to taste


Instructions

Step 1: Prepare the Ingredients

    • Peel and grate the beets. Chop the onion finely.

Step 2: Cook the Onion

    • In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and cook for 3-4 minutes until softened.

Step 3: Add the Beets and Spices

    • Add the grated beets, mustard seeds, ground allspice, and a pinch of salt and pepper to the saucepan. Stir to combine.

Step 4: Simmer the Relish

    • Stir in the apple cider vinegar and brown sugar. Bring to a simmer and cook, stirring occasionally, for 15-20 minutes, until the mixture thickens and becomes jam-like.

Step 5: Adjust the Seasoning

    • Depending on your preference, taste the relish and adjust seasoning with more salt, pepper, or sugar.

Step 6: Cool and Store

    • Allow the beetroot relish to cool before transferring it to a jar or container. Store in the fridge for up to 2 weeks.
