Description

Jamie Oliver’s Barbecue Chicken Dim Sum are steamed dumplings made with a tender barbecue chicken filling wrapped in thin dough. They are cooked in a bamboo steamer or on a stovetop, offering a flavorful and visually stunning dish.

For the Filling:

    • 300g (10 oz) cooked chicken, finely shredded

    • 3 tablespoons barbecue sauce

    • 1 garlic clove, minced

    • 1 teaspoon grated ginger

    • 2 spring onions, finely chopped

    • 1 tablespoon soy sauce

    • 1 teaspoon sesame oil

    • 1 teaspoon cornstarch

For the Dumpling Wrappers:

    • 250g (2 cups) plain flour

    • 125ml (½ cup) boiling water

    • A pinch of salt

For Garnish:

    • Sesame seeds

    • Fresh coriander leaves

    • Chili oil (optional)


Instructions

Step 1: Make the Dumpling Dough

    • In a mixing bowl, combine the plain flour and salt. Gradually pour in the boiling water while mixing with a spoon or chopsticks.

    • Knead the dough on a floured surface for 5-7 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.

Step 2: Prepare the Filling

    • In a bowl, mix the shredded chicken, barbecue sauce, minced garlic, grated ginger, spring onions, soy sauce, sesame oil, and cornstarch. Stir until well combined and set aside.

Step 3: Roll Out the Wrappers

    • Divide the dough into small balls (about the size of a walnut). Roll each ball into a thin circle, about 8-10 cm in diameter, on a floured surface.

Step 4: Assemble the Dim Sum

    • Place a teaspoon of the chicken filling in the center of each wrapper.

    • Fold the wrapper over the filling and pleat the edges to seal, forming a crescent shape or your preferred style.

Step 5: Steam the Dim Sum

    • Line a bamboo steamer or a steaming basket with parchment paper or cabbage leaves to prevent sticking. Arrange the dim sum in the steamer, ensuring they don’t touch.

    • Steam over boiling water for 8-10 minutes, or until the wrappers are translucent and cooked through.

Step 6: Serve and Enjoy

    • Transfer the dim sum to a serving plate and garnish with sesame seeds, fresh coriander leaves, and a drizzle of chili oil if desired. Serve hot with additional barbecue sauce or soy sauce for dipping.
