Jamie Oliver’s Banana Bread and Butter Pudding is a deliciously comforting dessert that combines slices of bread, ripe bananas, and a rich custard. It’s a brilliant way to use up stale bread while creating a warm and indulgent treat perfect for any occasion.


Ingredients

    • 68 slices of stale bread (white, brioche, or sourdough)

    • 2 ripe bananas, sliced

    • 50g (1/4 cup) unsalted butter, softened

    • 3 large eggs

    • 1/2 cup granulated sugar

    • 2 cups whole milk

    • 1/2 cup heavy cream

    • 1 teaspoon vanilla extract

    • 1/4 teaspoon ground cinnamon (optional)

    • 2 tablespoons raisins or chocolate chips (optional)

Optional Toppings:

    • Powdered sugar for dusting

    • Whipped cream or vanilla ice cream

    • A drizzle of caramel sauce


Instructions

Step 1: Preheat the Oven

    • Preheat your oven to 180°C (350°F) and grease a medium-sized baking dish with butter.

Step 2: Prepare the Bread

    • Butter one side of each slice of bread. Cut each slice into triangles or halves.

Step 3: Arrange the Layers

    • Layer the buttered bread slices in the baking dish, slightly overlapping them. Tuck in the banana slices between the bread layers. Add raisins or chocolate chips if desired.

Step 4: Make the Custard

    • In a mixing bowl, whisk together the eggs, sugar, milk, cream, vanilla extract, and cinnamon until well combined.

Step 5: Pour the Custard

    • Pour the custard mixture evenly over the bread and bananas. Press down gently with a fork to ensure the bread absorbs the custard. Let it sit for 10-15 minutes.

Step 6: Bake the Pudding

    • Place the dish in the oven and bake for 35-40 minutes, or until the custard is set and the top is golden brown.

Step 7: Cool and Serve

    • Allow the pudding to cool slightly before serving. Dust with powdered sugar and serve warm with whipped cream or ice cream.
