Ingredients
- 1 small pumpkin (about 1 kg), cut into wedges or thick slices
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon fresh rosemary or thyme, chopped (optional)
- A pinch of chili flakes (optional, for a bit of heat)
- 1/4 teaspoon ground cinnamon or nutmeg (optional, for extra warmth)

- Crumbled feta or goat cheese
- Toasted pumpkin seeds

Instructions
Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper for easy cleanup.
Wash the pumpkin, then cut it in half and scoop out the seeds. Slice it into wedges or thick slices, about 1-2 inches thick. You can leave the skin on or remove it if preferred.
In a large bowl, toss the pumpkin slices with olive oil, salt, pepper, fresh rosemary or thyme (if using), and a pinch of chili flakes and cinnamon or nutmeg for added flavor. Make sure the pumpkin is evenly coated.
Arrange the seasoned pumpkin wedges in a single layer on the prepared baking sheet. Leave a little space between each piece to allow even roasting.
Bake in the preheated oven for 25-30 minutes, or until the pumpkin is tender and golden brown around the edges. The exact time may vary depending on the thickness of the slices.
Remove from the oven and let the pumpkin cool slightly. Serve as is, or top with crumbled feta, toasted pumpkin seeds, fresh herbs, or a drizzle of honey or balsamic glaze for extra flavor.
