    • 125g (1/2 cup) unsalted butter, softened

    • 100g (1/2 cup) brown sugar

    • 1/2 teaspoon baking powder

    • 1 teaspoon ground cinnamon

    • 1/4 teaspoon salt

    • 1 small apple, peeled and finely diced

For the Crumble Topping

    • 50g (1/4 cup) rolled oats

    • 30g (2 tablespoons) butter, chilled and cubed

    • 30g (2 tablespoons) brown sugar

    • 1 tablespoon flour

    • 1/2 teaspoon cinnamon


Instructions

Step 1: Preheat the Oven

    • Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.

Step 2: Make the Crumble Topping

    • In a bowl, mix rolled oats, brown sugar, flour, and cinnamon.

    • Add chilled butter and rub it in with your fingertips until it forms a crumbly texture. Set aside.

Step 3: Prepare the Cookie Dough

    • In a mixing bowl, cream together softened butter and brown sugar until light and fluffy.

    • Add the egg and vanilla extract, then mix until combined.

    • In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.

    • Gradually add the dry ingredients to the wet mixture, mixing until just combined.

    • Fold in the diced apple pieces.

Step 4: Shape the Cookies

    • Scoop tablespoon-sized portions of dough onto the lined baking tray, spacing them apart.
