Description

Jamie Oliver’s Apple Cake is a delightful dessert that showcases the natural sweetness of apples. This moist and flavorful cake is perfect for family gatherings, tea time, or as a comforting treat on a chilly day.

Ingredients

Scale

  • 2 large apples, peeled, cored, and diced
  • 200g (1 cup) granulated sugar
  • 200g (1 3/4 cups) plain flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 100g (1/2 cup) unsalted butter, melted and cooled
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 100ml (1/2 cup) milk
  • Optional: 1/2 cup chopped walnuts or raisins

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 180°C (350°F). Grease a 9-inch round cake tin and line it with parchment paper.

Step 2: Prepare the Apples

  • Peel, core, and dice the apples into small chunks. Set aside.

Step 3: Mix the Dry Ingredients

  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

Step 4: Combine the Wet Ingredients

  • In a separate bowl, whisk the melted butter, eggs, vanilla extract, and milk until smooth.

Step 5: Make the Batter

  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the diced apples and any optional add-ins like walnuts or raisins.

Step 6: Bake the Cake

  • Pour the batter into the prepared cake tin and smooth the top. Bake for 40-45 minutes or until a skewer inserted into the center comes out clean.

Step 7: Cool and Serve

  • Let the cake cool in the tin for 10 minutes before transferring it to a wire rack. Serve warm or at room temperature, optionally with a dusting of powdered sugar or a scoop of vanilla ice cream.
