Description

Jamie Oliver’s Air Fryer Chicken Kiev is a modern twist on the classic dish, offering a crispy, golden breadcrumb coating and a rich garlic butter filling. The air fryer makes it quicker and healthier, retaining all the indulgent flavors with less oil.

For the Garlic Butter:

    • 100g (1/2 cup) unsalted butter, softened

    • 2 garlic cloves, minced

    • 2 tablespoons fresh parsley, finely chopped

    • 1 teaspoon lemon juice

    • Salt and freshly ground black pepper to taste

For the Chicken:

    • 4 large chicken breasts

    • 1/2 cup plain flour

    • 2 large eggs, beaten

    • 1 cup breadcrumbs (panko or regular)

    • 2 tablespoons olive oil (for coating breadcrumbs)

    • Salt and freshly ground black pepper


Instructions

Step 1: Prepare the Garlic Butter

    • In a bowl, mix softened butter, minced garlic, parsley, lemon juice, salt, and pepper. Place the mixture onto a sheet of cling film, roll into a log, and refrigerate for 15 minutes until firm.

Step 2: Prepare the Chicken

    • Using a sharp knife, make a deep pocket in each chicken breast, being careful not to cut through. Slice the chilled garlic butter log into four pieces and insert one piece into each chicken breast. Secure the edges with toothpicks if necessary.

Step 3: Bread the Chicken

    • Place flour in one shallow bowl, beaten eggs in another, and breadcrumbs in a third. Season the flour with salt and pepper.

    • Coat each chicken breast in flour, dip in egg, and then coat with breadcrumbs. Lightly press the breadcrumbs onto the chicken to ensure even coverage.

Step 4: Preheat the Air Fryer

    • Preheat your air fryer to 200°C (400°F) for 3-5 minutes.

Step 5: Cook the Chicken Kiev

    • Lightly spray or drizzle the breaded chicken with olive oil. Place the chicken breasts in the air fryer basket in a single layer. Cook for 18-20 minutes, flipping halfway through, until golden brown and cooked through (internal temperature should reach 74°C or 165°F).

Step 6: Rest and Serve

    • Let the Chicken Kiev rest for 5 minutes before serving to allow the butter filling to settle.
