Jamie Oliver’s 5 Ingredients Juicy Charred Chicken is a simple recipe that uses only five ingredients: chicken thighs, fresh thyme, lemon, chili, and olive oil. The chicken is marinated briefly, then grilled or pan-seared to achieve a deliciously charred, juicy result.
Ingredients
- 4 chicken thighs, bone-in and skin-on
- 1 lemon, zest and juice
- 1 red chili, finely sliced
- 2 tablespoons fresh thyme leaves
- 1 tablespoon olive oil
- Salt and black pepper, to taste
Instructions
In a bowl, combine the lemon zest and juice, sliced chili, fresh thyme leaves, and olive oil. Season with salt and black pepper, and mix well.
Place the chicken thighs in the bowl with the marinade, turning to coat each piece thoroughly. Let the chicken marinate for at least 10 minutes to absorb the flavors.
Preheat a grill or cast-iron skillet over medium-high heat. Ensure it’s hot enough to create a nice char on the chicken.
Place the marinated chicken thighs on the grill or in the skillet, skin-side down. Grill for about 6-8 minutes on each side, or until the skin is charred and crispy and the chicken is cooked through. The internal temperature should reach 75°C (165°F).
Transfer the charred chicken to a serving plate and garnish with any remaining thyme leaves or a squeeze of fresh lemon juice. Serve warm with your choice of side.
