- 1 can (400ml) coconut milk
- 300g white fish fillets (such as cod, haddock, or tilapia), cut into chunks
- 2 ripe tomatoes, chopped
- 1 small bunch fresh coriander, chopped (including stems and leaves)

1. Prepare the Ingredients
- Chop the tomatoes and fresh coriander, keeping the stems separate from the leaves.
2. Cook the Curry Paste
- In a large frying pan or shallow saucepan, add the curry paste and cook over medium heat for 1-2 minutes, stirring, until the paste becomes fragrant.
3. Add the Coconut Milk and Tomatoes
- Pour in the coconut milk and add the chopped tomatoes and coriander stems. Stir well to combine and bring the mixture to a gentle simmer.
4. Add the Fish
- Carefully add the fish chunks to the curry. Simmer gently for 6-8 minutes, or until the fish is cooked through and flakes easily with a fork. Stir occasionally but handle the fish gently to avoid breaking it apart.
5. Serve
- Once the fish is cooked, turn off the heat and garnish with the coriander leaves. Serve immediately with steamed rice or naan for a complete meal.
