Step 1: Prepare the Ingredients

- Ensure the rice is cooled and separate any clumps before starting.

- Finely chop the spring onions, keeping the green and white parts separate.

- Crack the eggs into a bowl and whisk them lightly.
Step 2: Cook the Eggs

- Heat a non-stick pan or wok over medium-high heat.

- Add a small drizzle of sesame oil and pour in the beaten eggs.

- Scramble the eggs gently until just set, then remove them from the pan.
Step 3: Stir-Fry the Rice
