    • 2 cups cooked rice (preferably day-old)

    • 2 large eggs

    • 2 spring onions, finely chopped

    • 2 tbsp soy sauce

    • 1 tbsp sesame oil


Instructions

Step 1: Prepare the Ingredients

    • Ensure the rice is cooled and separate any clumps before starting.

    • Finely chop the spring onions, keeping the green and white parts separate.

    • Crack the eggs into a bowl and whisk them lightly.

Step 2: Cook the Eggs

    • Heat a non-stick pan or wok over medium-high heat.

    • Add a small drizzle of sesame oil and pour in the beaten eggs.

    • Scramble the eggs gently until just set, then remove them from the pan.

Step 3: Stir-Fry the Rice

    • In the same pan, add the remaining sesame oil and toss in the white parts of the spring onions.

    • Add the cooked rice and stir-fry for 2-3 minutes until heated through.

Step 4: Combine Everything

    • Pour the soy sauce over the rice and mix well.
