    • 500g (1 lb) boneless, skinless chicken thighs or breasts, chopped into bite-sized pieces

    • 1 large leek, washed and finely sliced

    • 200ml (3/4 cup) crème fraîche or heavy cream

    • 1 tablespoon Dijon mustard (optional)

    • 1 sheet of ready-made puff pastry

    • Salt and pepper to taste


Instructions

Step 1. Preheat the Oven

Preheat your oven to 200°C (400°F). This ensures that the oven is hot and ready to bake the pie once it’s assembled.

Step 2. Cook the Chicken and Leek

Heat a large pan over medium heat and add a drizzle of olive oil. Add the chopped chicken pieces and cook for 5-7 minutes until golden brown and cooked through. Season with salt and pepper.

Add the sliced leek to the pan and cook for another 3-4 minutes until softened and fragrant. Stir occasionally to avoid burning the leeks.

Step 3. Make the Creamy Sauce

Once the chicken and leek are cooked, stir in the crème fraîche (or heavy cream) and Dijon mustard (if using). Allow the sauce to simmer for 2-3 minutes, letting the flavors meld together. Season with salt and pepper to taste. The sauce should thicken slightly and coat the chicken and leeks evenly.

Step 4. Assemble the Pie

Transfer the chicken and leek filling into an ovenproof pie dish. Roll out the puff pastry if necessary and place it over the top of the filling. Trim any excess pastry around the edges and use a fork to crimp the edges to seal the pie. Cut a small slit in the center of the pastry to allow steam to escape while baking.

Step 5. Bake the Pie

Place the pie in the preheated oven and bake for 20-25 minutes, or until the puff pastry is golden brown and puffed up.

Step 6. Serve

Once the pie is baked, remove it from the oven and let it cool for a few minutes before serving. Enjoy with a side of mashed potatoes, steamed vegetables, or a light salad.
