Ingredients
- 4 salmon fillets, skin-on
- 1 cup cherry tomatoes
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 bunch asparagus, trimmed
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- Zest and juice of 1 lemon
- Fresh thyme or basil leaves for garnish
Instructions
Preheat your oven to 200°C (400°F).
On a baking tray, spread out the cherry tomatoes, sliced bell peppers, and asparagus. Drizzle with 1 tablespoon of olive oil and season with salt and black pepper. Toss the vegetables to coat them evenly.
Place the salmon fillets on the tray among the vegetables. Drizzle the salmon with the remaining olive oil, then sprinkle with salt, black pepper, and lemon zest.
Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork. The vegetables should be tender and slightly caramelized.
Remove the tray from the oven and squeeze fresh lemon juice over the salmon and vegetables. Garnish with fresh thyme or basil leaves. Serve warm directly from the tray.
