Jamie Oliver’s Winter Salad is a medley of roasted or raw vegetables, fresh fruits, nuts, and greens tossed with a tangy and slightly sweet dressing. It’s a celebration of winter’s best produce in one bowl.

- 2 medium beets, peeled and thinly sliced or roasted

- 2 carrots, peeled and julienned

- 1 apple, thinly sliced

- 100g (3.5 oz) mixed greens (e.g., arugula, spinach, kale)

- 50g (1.75 oz) walnuts or pecans, toasted

- 50g (1.75 oz) pomegranate seeds

- 50g (1.75 oz) crumbled goat cheese or feta (optional)
For the Dressing:

- 3 tablespoons olive oil

- 1 tablespoon balsamic vinegar

- 1 teaspoon Dijon mustard

- 1 teaspoon honey or maple syrup

- Salt and freshly ground black pepper to taste
Instructions
Step 1: Prepare the Ingredients

- Peel and slice the beets and carrots. Thinly slice the apple. Wash and dry the mixed greens thoroughly.
Step 2: Toast the Nuts

- In a dry skillet, toast the walnuts or pecans over medium heat for 2-3 minutes until fragrant. Set aside to cool.
Step 3: Make the Dressing

- In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, honey, salt, and black pepper until emulsified.
Step 4: Assemble the Salad

- In a large salad bowl or platter, layer the mixed greens, beets, carrots, and apple slices. Sprinkle the toasted nuts, pomegranate seeds, and crumbled cheese over the top.
Step 5: Toss and Serve

- Drizzle the dressing over the salad just before serving. Toss gently to coat all ingredients evenly. Serve immediately.
