Ingredients
- 2 large carrots (sliced)
- 1 zucchini (chopped)
- 1 red bell pepper (chopped)
- 1 onion (chopped)
- 2 garlic cloves (minced)
- 200g mushrooms (sliced)
- 1 can (400g) chopped tomatoes
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon ground paprika
- 1 cup vegetable stock
Crumble Topping
- 150g plain flour
- 100g unsalted butter (chilled and cubed)
- 50g grated cheddar cheese
- 2 tablespoons oats (optional)
- Salt and pepper to taste
Instructions
Preheat the oven to 180°C (350°F). Heat olive oil in a large pan over medium heat. Add the chopped onions and garlic, cooking for 3-4 minutes until softened. Add the carrots, zucchini, red bell pepper, and mushrooms. Cook for about 5-7 minutes, stirring occasionally, until the vegetables begin to soften.
Once the vegetables are softened, add the canned chopped tomatoes, vegetable stock, thyme, and paprika. Stir everything together and let it simmer for 10 minutes until the sauce thickens and the vegetables are cooked through. Season with salt and pepper to taste.
In a mixing bowl, combine the plain flour, chilled butter, and a pinch of salt. Rub the butter into the flour using your fingertips until it resembles coarse breadcrumbs. Stir in the grated cheddar cheese and oats (if using) to add texture. Set aside.
Transfer the cooked vegetables into an ovenproof baking dish. Spread the crumble mixture evenly over the top of the vegetables, making sure the entire surface is covered. This will give the dish a delicious crispy topping once baked.
Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the topping is golden and crispy. The vegetables should be bubbling underneath the crumble.
Once the vegetable crumble is baked to perfection, remove it from the oven and let it sit for a few minutes before serving. This will help the crumble set slightly and make it easier to dish up. Serve hot as a main dish or a side.
